Bosch Recipe for Potato Pancakes with Smoked Salmon and Crème Fraîche
Serves 4

275g cold mashed potato
80g self raising flour
½ tsp baking powder
2 eggs
140ml milk
1 tbsp chopped chives
Salt and pepper
20g butter, melted plus extra for serving
150g smoked salmon, sliced
100g crème fraîche
Small bunch dill to serve

  1. Place the cold mashed potato in a large bowl. Sieve in the flour and baking powder. Use the Bosch hand mixer on the lowest setting to whisk the eggs and milk together in a separate bowl or large jug.
  2. With the Bosch mixer on medium speed, add the milk and egg mix to the potato and flour mixture. Beat until smooth. Add the chopped chives and mix again until the chives are well combined.
  3. Heat a non stick frying pan over a medium high heat. Brush with a little of the melted butter. Drop about 2 tablespoons of the batter at a time onto the pan. Cook for about 1 minute before flipping and cooking for a further minute on the other side. Remove from the pan and keep warm. Repeat until all the batter is used up.
  4. Serve warm, topped with a dollop of crème fraîche and some smoked salmon slices.
  5. Garnish with fresh dill.
