We have a very special recipe for you today from Irish TV chef Catherine Fulvios, who has shared with us her delicious Chicken and Spinach Mini Pizzas recipe. Catherine teamed up with Whirlpool for this recipe, which was baked using the Whirlpool 6th Sense Oven. We’ve also included a handy video of the cooking process below. Enjoy!

 

Ingredients

For the pizza dough

1½ tsp quick action dried yeast

1 tsp salt

1 tbsp olive oil

1 tbsp caster sugar

350g “00” flour

250ml luke warm water, you may need a little more

 

For the tomato sauce

1 leek, finely chopped

400g tinned tomatoes

2 tbsp tomato puree

1 tsp caster sugar

1 tsp chopped thyme

Salt and freshly ground black pepper

 

For the topping

200g shredded roast chicken

100g baby spinach leaves

6 small sprigs thyme

100g mozzarella, torn

Salt and freshly ground black pepper

Sprigs of thyme, for the top

Directions

  1. Switch on the Whirlpool 6th Sense Oven to the dough rising function. To make the dough, place the yeast, sugar, salt and flours into the large bowl of a mixer with a dough hook.
  2. Add sufficient warm water into the dry ingredients and mix until a soft dough forms. Knead with the dough hook for about 5 minutes until your dough becomes smooth.
  3. Remove from the bowl, and transfer to a large oiled bowl. Cover tightly with plastic wrap and place in the dough rising oven to rise and double in size. This could take about 1 ½ hours.
  4. To make the tomato sauce, heat a large saucepan over a medium heat and drizzle over the oil, add the leek and sauté for 4 to 5 minutes until softened but not brown. Add the tomatoes, tomato puree, sugar and thyme. Check the seasoning adding, salt and freshly ground black pepper if needed. Simmer for 20 to 25 minutes until smooth and cooked. Allow to cool.
  5. When the dough has risen, remove the wrap and knock back by pressing the dough hard to remove the air. Then place on a floured or oiled surface to knead lightly for 2 minutes.
  6. Divide the dough into 3 portions and roll with a rolling pin into a circle to fit the crisp plate.
  7. Preheat the crisp plate for 2 minutes in the Whirlpool microwave and then place the dough into the crisp plate. Lightly prick the dough with a fork and spread some of the tomato sauce over, leaving a 1cm edge. Brush the edge of the dough with olive oil.
  8. To add the topping, arrange shredded chicken and some spinach over. Top with the torn mozzarella and sprigs of thyme. Cook on the Crisp Plate setting for 9 minutes.
  9. To serve, using the crisp plate handle, take out the pizza, slide onto a board, drizzle with a little oil and more sprigs of thyme and cut into slices.
