Lentil and Tomato Soup Recipe

Get warm and healthy this winter with this quick and simple Lentil and Tomato soup recipe.

Bosch’s Recipe for Lentil and Tomato Soup
Serves 4

Ingredients
2 tbsp olive oil
2 onions, sliced
1 carrot, diced
1 clove garlic, chopped
1 red chilli, de-seeded and chopped
1 tsp ground cumin
1 tin chopped tomatoes
1 tbsp tomato puree
100g red lentils
1 litre vegetable stock

Method
1. Heat the oil in a large saucepan. Add the onion and carrot and cook over a low heat for about 5 minutes. Add the garlic and chilli and stir over the heat for another minute.
2. Stir in the ground cumin and cook for about a minute. Add in the chopped tomatoes and tomato puree. Place the lentils in the sieve and rinse under cold water. Add to the pot with the vegetable stock.
3. Cook for about 20-25 minutes or until the lentils are soft.
4. Use the Bosch hand blender with the blender foot attached to blend the soup. You can leave the soup slightly chunky or blend until really smooth.
